Hilda's Pumpkin Pie


2 9" pie shells unbaked
1 1/2 cup pumpkin
1 1/2 cup sugar
2 heaping T cornstarch
1 t. salt
1 t. ginger
1 t. cinnamon
1/2 t. nutmeg
1/2 t. allspice
3 eggs separated
1 can evaporated milk

Beat whites stiff but not dry. Set aside. Whip yolks, add evaporated milk and 2 Cups water, blend together. Combine remaining ingredients and add to above and fold into whites. Bake 425 about 15 minutes then 350 about 45 minutes until knife comes out clean.
