Carolyn Memorial (11/11/96) Yeast Rolls


Put 3/4 cup shortening, 3/4 cup sugar, and 2 teaspoons salt into a bowl. Pour 2 cups boiling water over them. Mix. Let stand until luke warm.

Dissolve 2 packages of dry yeast in 1/2 cup luke warm water. Add to above. Add 2 cups flour and 2 eggs (room temperature) and beat with mixer a long time (very important, takes about 10-15 minutes).

Gradually add 6 more cups flour mixing with electric mixer. Finally mixing with spoon or hands. Cover dough with damp cloth and let rise in warm place (2-3 hrs). Turn out on slightly floured board. Dough is soft.

Kneed lightly (do not handle too much here so that rolls turn out light). Roll out and cut with a biscuit cutter. Put on cookie sheets. Cover and let rise until doubled in size (about 1 1/2 - 2 hrs).

Bake at 375 degrees until very lightly browned (about 10-12 minutes).
