Chocolate Mint Brownies


1 cup flour
1/2 cup butter, softened
1/2 t. salt
4 eggs
1 t. vanilla extract
1 can (16 oz) chocolate syrup (I used Hershey's)
1 cup sugar

Filling:

2 cups confectioners' sugar
1/2 cup butter, softened
1 T. water
1/2 t. mint extract
2-3 drops green food coloring

Topping:

1 package (10 oz) chocolate chips
9 T. butter
1/2 t. mint extract

Combine the first seven ingredients in a large mixing bowl; beat at medium speed for 3 minutes. Pour batter into greased 9 x 13 inch baking pan. Bake at 350 for 30 minutes. Cool completely. Brownies will pull away from sides of the pan as it cools.

Combine filling ingredients in medium mixing bowl; beat until creamy. Spread over cooled brownies. Refrigerate until set.

For topping, melt chocolate chips and butter in microwave. Add mint extract. Let cool for 30 minutes or until lukewarm, stirring occasionally. Spread over filling. Chill before cutting. Store in refrigerator.

I make these the day before I need them since you have to wait until it cools and then wait until the frosting sets. They keep really well in the refrigerator. Enjoy and Merry Christmas!
