Light Dinner Rolls


3/4 Cup warm water
1/2 C sugar
2 pkgs yeast
1 t. salt
2 eggs
1/2 C soft butter
4 C white flour

Add yeast to water and add to rest of ingredients except for 2 C flour. Beat snot out of it :) Add the remaining 2 cups of flour. If your mixer has a dough hook, mix it that way til smooth and velvety... or else by hand til smooth. Cover with cloth and let rise in warm place til double. Divide in two parts. Roll out each piece in a circle and cut in pie shaped the size you prefer. Roll into cresent shape. Place on greased baking sheets (I have 2) and cover til double. Bake 400 about 8-10 min. The recipe says 12-15, but mine would be burned. I use the rapid rise yeast and unbleached flour.
