First dissolve gelatin with boiling water in an 8 or 9 inch square metal pan. (The pan helps the gelatin cool faster.) Then remove 1/2 cup and pour into a bowl. Add 1/2 cup cold water to the gelatin in the pan and place in the freezer until it thickens -- 10 to 15 minutes.
Meanwhile, add 1 cup ice cream to the gelatin in the bowl; stir until smooth. Remove thickened gelatin from the freezer and, if desired, stir in fruit, reserving a few pieces for garnish.
Spoon thickened gelatin and fruit into individual dessert glasses. Top with the ice cream / gelatin mixture. Chill 30 minutes. Garnish and serve.
Makes 5 servings with fruit added.
