Pour 1 tall can "Carnation" evaporated milk into shallow metal pan and set in freezer until ice forms around edge (takes about an hour).
While the milk is chilling, press graham cracker crumbs and 1 stick melted butter into bottom of 9 x 13 x 2" pan. Reserve few crumbs for top. Dissolve and cool 1 package lemon jello with 1 cup boiling water. Add 3 Tablespoons lemon juice. Cream 1 8 oz. package cream cheese and 1 cup sugar. Add to jello.
Whip the 'iced' milk and add to above. Add 1 t. vanilla. Pour into shell and sprinkle few crumbs over top. Chill overnight.
